Yea there are several great shops in Orlando though, check out http://www.divestation.com great PADI course director and dive shop.

Referral is definitely the way to go, then she doesn't have to waste a day or so of her holiday in the pool and the classroom, she can just get down to the really fun part of actually diving!
I've dived extensively out of Ft Lauderdale and down to the Keys, and there are reasonable dive sites (wrecks, reefs, etc) all the way down.
