Um. You do know that wetsuits are made out of neoprene, not latex? There are latex seals on some drysuits, but even there you can use neoprene seals instead.

Edit. Just read up a bit on this. Some folks with latex allergies also have neoprene allergies. Is this the case here? You also might want to try doing a search on "latex allergy."
 
some of them use latex around the edges. Chances are you can find one that fits and have the latex removed and another material used on the edge. I think your most realistic option is a custom suit. I know in California we have people that can make one to fit with precrushed neoprene... it will cost more but the suit will last longer than any other suit... not to mention fit perfect!
