I just got back from AKR (having withdrawls) and had no sickness at all. I ate ALL the food, and drank the water too. My wife was with me too and we both had no problem at all. BTW: there were some Canadians there. Now, we flew straight into Roatan, we never stayed/visited the mainland.
As for AKR, I never doubted that the food was not handled/prepared properly. Everything was fresh and tasted good, no upset stomach (just ate too much).
