I just did a search based on Mon-Mon with flexible (2 days either side of the dates) and came up with $409 roundtrip (all taxes included) LGA-SAP (San Pedro Sula), with one stop in ATL. They had about 6 variations of it.

Then from SAP-RTB, you're looking at $86 RT to La Ceiba or $202 rt to RTB (yikes...) on Atlantic Airlines (that's who I rode every time, but as a pilot they let me jumpseat...). Their website is:
