We'll be staying at Bananarama early next year for a week. Trying to gather a list of places to eat nearby. Looking for both lunch and dinner recommendations. We'd like a mix of inexpensive places (mostly) and nicer spots (a few). Any places in/near the West Bay Beach / West End you'd suggest?

Bananarama is a great choice. Their new restaurant is really nice but a little pricey. The west end has a lot to choose from. Unfortunately I can't remember the names but their menus are normally out for inspection. Ask at Bananarama which is what we did and got great recommendations.
 
For a really amazing restaurant experience there is a place (forget the name...) right next to the submarine dock in West End. It's a really romantic restaurant featuring seafood and Italian and you can have a table literally at the water's edge by the submarine so you can see the lights of West End but are away from the hustle and bustle. The road to reach that area is an easy walk from Sundowners (which also has amazingly cheap drinks and great food and people).
At the end of the main road in West End (heading towards West Bay... I'm not sure what the name of the road is or if there IS a name) there is a restaurant and bar that had beach parties on Sundays with barbeque and dancing and such.. highly recommend joining in the festivities. I wish I remembered the names of either of these restaurants, I think I was just in such a food coma that I didn't realize...

I believe you're talking about the restaurant at Half Moon Bay Resort - Half Moon Resort Bar and Restaurant. Best Seafood in Roatan
 
It is amazing to see how many good restaurants there are on the island. If you can go a little further towards Sandy Bay, try the restaurant at the Blue Bahia. This is one of the best restaurants on the island. It's a barbecue joint (pulled pork, ribs, etc.) Great food and great service.

One general comment...restaurant prices in some cases are close to (or more expensive than) what you would find in the US. Also, even if a restaurant says it takes credit cards, the machine may not work that day so be ready with cash. Also, even though it is not allowed, some places still tack on a surcharge for credit cards.
