Thinking about this. It's a serious drive from Savannah, not really doable over a weekend - so looking at flying in. Is there an airport closer than IAH? If not, any thoughts about how to travel between the airport and dock? Rental car?
Yes, fly Southwest into Houston-Hobby. Hobby is on the South side of town, maybe 45 minutes from the boat, and avoiding Houston traffic.
 
I'd get the car and go to a restaurant near the Fling, get dinner (we ate at "On the River" and it was fine), and wait until 7pm.
I can't believe On the River is still there.

No, we were running really close to 7pm so my wife and I just split a burger and fries and our friends got shrimp po boys. They were nice about getting taking our order and getting our food out fast, plus it's super close to the dock.

And, in the end, they served food on the Fling that night. It was just biscuits with, I think, ham and cheese, with chips but it would have been fine had we not gotten to eat dinner.
