I find the easiest way to fillet them is to take a sharp cleaver just behind the gills and cut the head off. After that your fillet knife slides up their back real easy. They are my favorite fish to eat, but I to learned the hard way, never string them anywhere but through the gills and mouth. Had one bite down on my hand and did not let go until I was back on the boat.
