IMO Something simple like a nice sharp barbecue fork would do the trick.
We just returned from a week in Curacao, (and enjoyed sol food and your island guide), and saw lion fish on every dive except 2. I considered killing them, but didn't think it was my place to do so. They have very little fear and let me get within a couple inches with my video housing. I think you could kill them with almost anything sharp or pin them down.
