How substantial are the differences between these two wings? Are they such that someone new to doubles diving twin 72's would be able to appreciate?
 
I haven't used an evolve, but I have used an explorer along with several donut wings on double-72s, and my initial thought is that a donut wing like the evolve would be highly preferable on such tanks.

The explorer is widest at the base, and as such has most of its lift by your butt. This isn't good for top-heavy tanks like double-72s. The explorer's widest point is in the middle of the wing, putting the lift closer to your head where you need it. Most donut wings are like that in fact.

Also, donuts are easier to vent from the back, as you typically don't have to lift your shoulders and tilt to the left in order to dump. The explorer itself has a back dump that is positioned a bit too far from the outer-most part of the wing, making it very difficult to get all the air out - I've heard of people coming up with moves such as grabbing the entire top edge of the wing while dumping, in order to evacuate it while keeping trim.
