I think you've touched on one of the issues with using the DUI W/T harness. It's difficult to hand up weights to crew members on the boat prior to re-boarding. You could put your weights in a pouch and then put them inside the velcro DUI pocket, but you may find it difficult to access those pockets since they'll ride underneath your BC.
The DUI W/T works great for cold/temperate water diving and can be very useful for drysuit divers who require more lead. It really excels on shore dives. For boat dives here in SoCal, we almost always re-board the boat with all of our gear intact (minus fins), so removing weights isn't an issue. A friend of ours has a RIB that can make it to nearby dive sites in the Point Loma area. A well-timed fin kick is usually all that's needed to get back in the RIB with all gear intact. In warm water destinations where divers are asked to hand up weights prior to re-boarding, e.g., Cozumel, the DUI W/T isn't necessary since you're probably wearing less exposure protection and a weight belt with 6 to 8 lbs. would be easy to hand up to crew members on the boat. Another option is to forego having any ditchable weight which can have its disadvantages.
The DUI W/T harness works very well with a BP/W rig. The large yellow pull-ditch handles protrude from beneath the waist strap. I'm not sure whether your Deep Outdoors BC is configured similarly.
This probably goes without saying but I'd recommend not releasing the entire DUI W/T harness pocket prior to re-boarding a boat unless you like re-threading those suckers while the boat pitches up and down. It's a surefire way to lose your breakfast/lunch. If the dive is the last of the day, then it's probably OK since there's no need to re-thread them on the boat.
