To the OP, if you are staying in Kihei, that's perfect, most of the boats go out of Kihei. Ed Robinson, Mike Severns and B&B are all excellent. You have to try boat diving at least once so you can get out to Molokini.
Also try shore diving, use a guide for your first few shore dives, as others have mentionned.
If you have time, you can also try Lahaina divers out in West Maui. It's a bit of a drive, but offers some stuff different from South Maui.
