I'm going to Roatan this winter and would also like a day trip to Utila to dive with the Whale Sharks. Are there dive shops on Roatan that offer this - if so any recommendations? And what's the best time of year to see these sharks? Thanks for any and all input.

Don't bother going to Utila for a day if it's just for whale sharks, you have less than a 1% chance of seeing one. I have averaged 3 months a year on Utila since 2007 and see them 3-4 days per year on average and that is almost always March-May, September and occasionally January.
If you really want to see them you need to stay on Utila for a week or two, in one of the months mentioned above and even then you are not guaranteed a sighting.
ps. Contact with whale sharks around Utila is via snorkeling, not diving.
