Hi,
Can some one explain what's the use of bungee in a bungee wing like OMS? What will happen if I take off those bungee? Does that matter?

The idea of the bungies is to pull in the wing, reduce "tacoing" and drag, and make dumping air easier. It's often a "hack" which is intended to allow over-sized high-lift wings to be used on single-tanks. Without the bungies, your wing effectively turns into a giant parachute, if your wing is too big.

The ideal scenario, is somebody dives with a wing which is appropriate for the dive. Specifically, diving with a single-wing when diving single-tank, and doubles-wing, when diving a doubles tank.

The other thing to be aware of with bungied-wings, is the bungies can become entanglement hazards if you dive restrictions or overhead-environments of any kind. If you're sticking to open-water, it's probably not a big deal though.
 
The bungee is to compress the wing and to auto-compact it to help prevent tacoing and fluttering in the breeze. The VDH wings have an internal bungee that just flat out works great. The external bungees I am less smitten with like OMS.

There's no use of bungees. Cut them off, or better yet sell that garbage to some other sucker and buy a proper wing. If you have a well designed wing which matches the size of your tanks then it won't protrude excessively and you won't have any trouble dumping gas. The problem with bungees is that if you have a minor wing leak, the compression from the bungees will keep forcing gas out thus turning a minor problem into a major one. They also cause a bit of extra drag.
 
One first needs to differentiate between a bungied wing (i.e.: the old OMS wing) and a gusseted wing (i.e.: DiveRite CCR & VDH) and the purpose of each application...
 
I’ve used the OMS silicone bungee on a dive rite voyager, they did the job perfectly, it’s a wide wing and the bungee helped keep it tucked in, beware of people speaking in absolutes, avoid dogma.
 
I'm going to caution you that some people on SB have an absolutely VICOUS HATRED for bungied-wings, and perhaps need to take a chill pill. There's probably a few 50+ page long threads somewhere on the whole bungied-wing debate.

You can remove the bungies if that's what YOU really want to do. You can also leave them if they're not in your way, and you're not doing any overhead-environments. If you want a "perfect" or "ideal" wing, then get a wing designed for a single-tank, and don't cut up your wing. Selling the wing is also a great option, if you don't want a bungied-wring, because if it doesn't work for you, it might work for another diver.

My Hollis 25 had an internal bungee whose purpose escapes me to this day:
- it is not a big wing, tacoing is not a issue in the first place, and if it were, with the bungee inside, the shell would be still free to taco.
- I think without the protection of outer shell the cord would make the stress points on the bladder. They wouldn't be much, but why have them if you don't need them?

So I removed the bungee -- but like I said: it's not such a wide/big wing that it taco-es to begin with.
