I have emailed both Don Fosters and Cayman Marine Lab, I am looking for a dive this winter, and both places seemed to be running an excellent operation from what I can see/read.
Is Cayman Marine Lab in the George Town area?
 
I know it's sticker shock, but consider a liveaboard like the Aggressor. If you're planning on a week with lots of diving, the cost actually comes out pretty even when you factor in dives, food, hotel, drinks, etc.

Plus the convenience of having your gear perpetually set up, no schleping gear around, and always being "over the dive site" can't be beat.

Since you're staying at the Seaview, dive with TIDivers. They're a great group of people, friendly and easygoing. The boats (they have at least 3) were never crowded and the divemasters at least attempted to get to some of the more difficult sites - we washed out going to the South Side due to current conditions - so we went North for some great dives.

Personally I've heard that Red Sail is a big cattleboat operation. I'd also heard really good things about Don Fosters, they were our second choice. Fisheye is the choice if you're doing any filming.
