I am tempted just to do all the course and pool stuff here and do the referral on vacation.

That's a good way to go. I know many people that did that. Many reputable dive ops discussed on this board would be happy to accommodate that:

Blue XT Sea Divers (Christie)
Tres Pelicanos
Aldora Divers
Dive With Martin
and many others
 
We haven't heard from them but they may have already been to Cozumel. In any case I just hope they didn't book someone through the cruise ship. I told them they would be crazy to go to Cozumel and not try it. The younger daughter is certified but had only been diving in California, which ain't bad, but it's still not Cozumel.

My girlfriend went out on the boat while I was diving and kept seeing all these people coming out of the water talking about how great it was (Cozumel). She did a Discover Scuba and then got certified! She is one of those people who never even imagined doing it until she met me and she loves it.

This is the way to go. I did it about 4 years ago and my brother did it last year. You will basically spend day 1 doing a shore/shallow dive and day 2 on the boat doing a 2 tank dive and you are done.
 
As Chrsti said it normally takes two sessions. First the shallow water instruction and then the actual accompanied dive so if you want to do it in a single day the accompanied dive would typically be in the afternoon. That not to say that if you have several days available the shallow water couldn't be done the afternoon before and the accompanied dive the next morning. I have often seen this done. What I have seen though is that during dive the instructor does not want a close friend or family member to get in between them during dive for obvious safety reasons. Close but at a safe distance is OK but not interference.
