I have no Dahab experience to speak of, but just a bit further south, in Sharm, I don't even recall seeing 7mm suits for rent. If you think about it, you can see why: these are more expensive than 5mm suits (and shorties!) and would probably only be used from Dec to March, realistically.
I'd keep trying, if I were you, but I would starting thinking about a back-up plan.

I seriously doubt that you'll find a 7mm suit for hire anywhere to be honest.
1. Bring your own.
2. Rent a 5mm and bring additional layering such as a hooded vest.
