My wife and I were on the Carnival Magic in December, and stopped at two of the ports you mention.

In Coz, we booked independently with Scuba with Alison. She's a FANTASTIC dive operator, and treats her customers more like friends and family than just a "client." She's accommodating to cruise ship passengers like us and we had a great time. She's also very popular and since her boat only takes 8 divers at a time, you need to book early with her. We will definitely use her any time we are in Coz.

In Grand Cayman, based on the time we were there, we really had no choice but to book through the cruise line. Carnival uses Don Foster's and based on some research, the prices we paid through Carnival were actually pretty competitive with doing it independently.

Just back from back to back on the Carnival Glory. first week was Cozumel, Roatan, Costa Maya (was supposed to be Belize), Grand Cayman. Second week Nassau (no dive), St. Thomas, San Juan (no dive again), Grand Turk.
I booked everything through the ship.
For me anything in the water is great. I dive North East (Long Island, NY) Atlantic, Florida (Boyntan Beach), and the Carib on cruises.
 
this is not true. they are close to the same as I see just the Cruise ship has alot more divers and they dont worry about you being back to dive tomorrow...
