I noticed that Zeagle sells a DIN to Yoke adapter (DIN to Yoke Adapter - Zeagle) but I'd like to convert my F8 from being Yoke to being DIN. Does anyone know how I go about that, is it easy, cost-effective and can I undo it easily?

The part you link to isn't what you need. The part you linked is when somebody has a DIN first stage and wants to temporarily connect it to a Yoke Tank valve.

If you have an F8 with a Yok connection and you want to change that to a DIN connector, you will need to replace the Yoke connector with a DIN connector. You should have an authorized Zeagle dealer do that for you.

This is what you need:

Thanks, I'll call them tomorrow to see what it would cost to do.. if I do that, then I'd need to get that adapter linked so I could dive in places (aka. the carribean) with yoke

Exactly!

Not sure its worth it, was considering buying some tanks that are DIN (3500psi), but conversion cost, plus that adapter ($80)...

If you have your own Tanks or going to buy your own, get DIN valves and use a DIN first stage.
