With fees and taxes, we paid USD $240/night for the Riu Tequila all-inclusive; stayed 5 nights. We had out-of-state non-diving friends visiting so it was fun to join them. There are 6 Riu properties in PdC, 2 are premium (called "palace") and allow access to all six resorts and the 4 non-palace locations allow you to visit the 4 non-premium. Tequila is the party spot, the only location with a nightclub and they had a Friday night white party where over 1000 people attended. For the food, breakfast was breakfast, and the food generally sucks at all AIs so you can walk 20 minutes to 5th Street the downtown area of PdC, or pay 300-400 pesos roundtrip in a taxi (we often walked there and take a taxi back). You can find cheap restaurants off of 5th Street but if you eat on 5th Street you get to people watch
We used Cenotes Experience for the diving, they offer pickup and drop off which we enjoy
