I am looking for a recommendation for a cenote guide who will provide doubles rather than the standard single AL80. I will be going with a small group of four people total so a private guide as opposed to a dive shop is fine.

why do you need doubles? A normal cavern tour has a max of four people and one guide. Run time going to be an hour and the depth shallow so doubles are just overkill. If you still want the doubles then you have to contact the operator and work that out in advance.

Doubles and an overhead environment seem like they should go hand-in-hand. I am comfortable diving doubles so I figured I might as well use them if I can find someone who will provide them.

You will need to check with the shop you go with. They do have doubles, your guide will be using them. Likely will cost a bit more if they agree. I have never seen a cavern tour using anything but the Al 80.

Unless you're a HUGE air hog, there's no real rason to use doubles. I'm a bit of an air hog, and even I don't have any trouble doing the cenote tours on a single AL80, following the rule of thirds.
It's certainly possible to need more, if you're a big enough air hog. Last week in Cozumel, we dove with twins from the UK who managed to blow through their air in 20 minutes. I stayed down 44 and had 1000PSI when I got back on the boat. But frankly, their skills were so lacking that I know our guide (Alvaro from AlwaysDiving.com) would not take them in the cenotes, and I doubt anbody reputable would.
