I'll link you 2 of my old Bonaire trip reports to get some idea what a trip might be like -

Following up what others have said, Bonaire is not the 'big stuff' place. I've been 5 times, probably around 80 dives there. In all that, I've seen 2 really big green moray eels, a bunch of tarpon, 3 spotted eagle rays (none let us get close), several sea turtles (mostly garbage can lid-sized, but perhaps one big hawksbill), 4 rainbow parrotfish (they get 3-4 feet long & in close quarters can be intimidating), a maybe 3+ barracuda in the 3-4 foot range, a few grouper (maybe 2 to 3 feet; not huge, though), a porcupine fish so large I didn't know they got that big, and a pretty big cubera snapper. Floating at the surface, a buddy pointed out a pod of dolphins in the far distance once.
I haven't seen a shark or manta ray yet.
If you don't do a live-aboard, I suspect you can get more dives in going to Bonaire than the other 2. A lot of boat dive trips seem to involve staying at a hotel, meeting the dive boat in the morning, heading out for 2 1-tank dives, getting back maybe mid-afternoon, then messing around town or what-have-you. So 2 dives per day, maybe get a night dive in during the week sometime. Bonaire, I'd say 3 to 4 shore dives per day; you can do more, but 4 or especially 5 can drain some folks (including me).
