Im going back down to Playa del Carmen for a few days at the end of April and would like to take the Cavern Diver Course while Im there. Any recomendations on what OP I should go with? Thanks for the help.

I would suggest Gerardo at Scuba 10
It really depends on your experience level, and what kind of person you are.
With the low dive count you have in your profile, I'd think you'd do best with a very supportive instructor. I would recommend German Janez of Yucatech -- he was my cavern instructor, and he is a lovely, positive, encouraging teacher.
If you're pretty strong on skills, I'd suggest a good friend of mine, Jason Renoux; Jason just got his certification to teach through Intro to Cave, but he has more years underwater than I'll ever reach, and he is an incredibly joyful diver, and a wonderfully graceful role model.
Kudos to you for deciding to take a cavern class. No matter how much or how little overhead diving you do subsequently, the class will give you skills that will improve all your OW diving.

Been a while but did my cave with Aquatech, Akumal Beach Resort Villas DeRosa - Aquatech Dive Center Akumal

Second the recommendations for Protec and Jason. He was finishing up his evaluation during my Intro->Full course and was mostly the "ghost". Nice guy, and his comments were thoughtful and worthwhile.

I have had very good experiences with Aquatec in Akumal.

I would defitely NOT use Protec in Playa. I had very bad experiences with them.
