It dosn't hurt em so how is it cruel? I bet the same people that would biotch about this kind of things have cats that torture birds and mice to death and don't think twice about it. Now grabing a cow with one, sounds a little mean even to me.
 
If I saw a claw grab a cow, I'm sure I'd LOL.
 
I have heard there is no need to boil a lobster live. The rumor is you can put them in a refrigerator and they will die a painless death, I wonder if there's any truth to this?? I might call the mythbusters.
 
Was it a Crabby Jack's restaurant.
Most lobster tanks are the same thing in any restaurant, just no crane/claw to grab them out.
 
Tests have been done and lobs/crabs hit sensory overload in a fraction of a second, no pain.

Myth.
I have seen a live lobster put in a fridge and it was still alive 24 hour later.
If you want to be humane about it, then leave them alone.
Personaly I either boil them alive or freeze them alive or dare I say it eat them alive.

I have been wanting to start a tank....1 lobster 14'' long, I'm guessing 1 80 gallon tank would work...
 
Great now I can only think of Toy Story and the aliens... THE CLLLAAAWWW!!!! ooohhhhh wonder if the lobsters think the same thing... the great claw cometh, who will it take to meet the great butter dish in the sky...
 
In the eyes of the lobster, it probably has no clue what is going on, but I agree that a device like that is in poor taste. I wouldnt want my children to witness adults being so unemotional about that sort of situation. It comes off as a lack of respect for the animal. I have the attitude that we only take what we are going to eat and have respect for it. That's just one opinion.
