Been at VA many times. All rooms have coffee maker, microwave, fridge and toaster. You can make scrambled eggs and bacon in microwave (put paper towel over bacon). Other rooms fave full kitchen. Toast with peanut butter or jam, Cereal, oatmeal, leftovers, bacon, eggs, coffee... are fast and easy unless you totally don't do cooking.
 
You could stay at Villa Aldora and ride a bike to COZ, have breakfast and leave the bike at Aldora’s shop and meet the boat at the pier.

I don't know anyplace that opens before 0730. Even a place that opens at 0700 may be on island time. Maybe ask a taxi driver for recommendations.
 
If you want a full breakfast in the AM, request a room that has more than a kitchenette. Alexander room is a good example of that. Full kitchen with a full sized fridge and full sized electric range. Plenty of cookware, too. Cameron Suite is another. Or go big and get the Barracuda, Falice, Aldora, or Norte Suite.

After check in, they will take you to the shop downtown to check in with the shop. It's an easy walk to Mega from there and a reasonable taxi ride back to the Villa from Mega. (it was $100MX last time) The Villa even has reusable shopping bags for use. There's a small convenience store just down the road from the Villa to grab a few small items mid-week if you want to avoid another Mega trip for a small shop.
 
this is an indirect response to your question but one of the reasons people get hungry 60-90 min after eating breakfast is that their breakfast is too carb-heavy (cereal, oatmeal, toast, granola, fruit which your body burns immediately). If you buy a big container of full fat unsweetened greek yogurt for your fridge and take some nuts (or a bag of keto granola you can throw in your suitcase) you'll be consuming over 25 grams of protein and 20 grams of fat and you'll be surprised how long this keeps you full. Boil some eggs in the microwave the night before if you think you want even more food and eat it with an entire avocado in the morning -- you won't be hungry during your dive. Try this before you go on your trip to see if this works for you.

Or just heat up your leftovers from dinner and throw it into a tortilla with some cheese and you have a breakfast burrito. All of these options are way easier than wandering around at the crack of dawn in search of a restaurant but maybe you're an early riser and enjoy being up and about.

Thanks, sounds like great advice. Or maybe I'll stick to one meal a day and enjoy nice dinners.

My routine on a dive day:

Breakfast: PB&J on toast, coffee, orange juice, at the room
Lunch: Ham, avocado, and cheese sandwich, beer, at the room
Dinner: Restaurant in town
