Skipping the Might O is probly a good call for newer divers.
I did a circle, open-jawed trip once that included flying to Orlando MCO, flying to Miami MIA several days later, driving to Key West, dropping the car there to fly out from there. The flight from MCO to MIA was a questionable decision that saved me 250 miles of driving but cost me time in checking in, waiting, boarding, flying, waiting for luggage, etc. I haven't driven that road since the 80s so have no idea what the traffic is like now, a question better discussed on the Florida forum I suppose; since you'll be on an International ticket, it might be more cost effective to do that flight today than it might be for an American - but I don't know how the airlines are handling those packages. Two choices to consider since your wife has never done Mickey Mouse Land.
The Florida Keys are an interesting experience, each one different along the 100 miles from Key Largo to Key West along the Overseas Hiway. I found reading about the history of the development and partial ruin of The Keys fascinating, as are The Keys themselves today. Key West I can do without. The good diving runs from Key Largo 70 miles down the OSHiway and there are dozens of good operators along the way.
