Very tiny zip ties work well to hold loose bungee ends after you make a knot..
you can even get them in cool colors... if that's important....

I use a knot like this for my mask strap.
Works very well.

Heat up the end and while it is still hot, press it down onto a flat surface and it will put a better flair on the end. I use the bottom of my lighter and it creates enough of a flair so it won’t pull through. Some shock cord is stiffer than others and the ones that don’t stretch much have a harder time getting the ends right
 
Forget slidng knots on adjusting end, use plan overhand knot.
Two separate pieces of cord, so you have redundancy. Pull adjusting end to, well, adjust and just tuck it under.
A lot easier to adjust if wearing gloves
