Wiife and I love Grand Cayman and the North Wall diving is great but we have avoided the turtle farm on the advice of local dive operators.

You also didn't mention Turtle reef and the Macabuca bar! A great place to dive and watch the sunset. Don't miss the Monday BBQ either!
 
I love Grand Cayman. Going in November. The family enjoys Pirate's Week, and I love the diving. If your staying on 7 mile beach, I highly recommend Ambassador Divers, and for East-enders Ocean Frontiers is top notch. Yes Hell is lame, but go if you want. A must do on Grand Cayman is definitely Stingray City. You can dive it at 12ft or snorkel it, at 3-4ft depth.
