I bought an XDeep Zen BP/W about a week ago and I think I am doing something wrong in adjusting it.

I bought the deluxe version with the adjustable harness but I think that even with the straps tightened to a maximum it is still way to low on my back.

Please look at the pictures and tell me what you think. I tightened the straps as far as I could before the fotos were taken. Xdeep Zen users probably know at a glance!

I agree that it will sit higher in the water. Make sure the waist strap is tight enough to help carry the load, you actually don’t want the shoulder straps too tight.
 
Pictures from the front or side show the plate to sit a couple of inches lower relative to the waist belt than a regular BP. I don't think you've done anything wrong, just that it's a very weird design. I'd return it and get a standard plate and harness.

I also have the zen
am about 188cm tall
at first glance it looks similar to yours. kind of funny i say.
but in the water it fits really well
adjust the d rings again, they have to be higher
the shoulder straps can be really loose
the stability in the water comes from the crotch strap and the belly strap

you also made the request in diver net, didn't you?
