A nice place to fish and stay for one month (around JAN)?

Hello from Greece which starts to get cold again! I would like to visit a nice warm place (anywhere, island or not) that offers clean waters for spearfishing, lobstering and diving. Since I'm going to spend a month or more it would be very nice if the nearby town or village(s) has things to do. Not a party place full of drunk people, but not boring one either. Relative cheap and communicating language English, Italian, French (or Greek;o) If anyone has any suggestions for anywhere, on how to make my holidays perfect...
