I'm going from a 80 cf AL to a 100cf AL for an upcoming trip. How will this change the weight I need?

If these are both Luxfers, add a pound of lead.
 
Luxfor S80 +2.26 empty, -3.6 full
Luxfor 100 +3.11 empty, -4.34 full

Catalina S80 +4.00 empty, -1.8 full
Catalina C100 -.04 empty, -7.8 full

It's the "empty buoyancy" that matters here.

As you can see the data lemke posted supports TS&M's reply. If you end up with another combination do the math.
