Does anyone have a recommendation for a 5mm wetsuit with a built-in hood?
 
Not actually 5mm, Hollis makes A 4/3 semi dry that's probably comparable in warmth. It also has pockets
 
Sure! Check this out. A very warm, comfortable and high quality 5 mm suit with zero water leakage from zippers. Great for scuba and freediving.

I think a standard suit worn conjuction with a hooded vest would be more versatile.

Personally I prefer the first water that comes in to be at my chest rather than down my back. Otherwise I agree that it's a good combo and gives you the no-hood option. Not what the OP asked for though.
