The larger diaphragm sucks in with greater force but consequently moves a smaller distance, like with the hydraulics in a brake system.

Sort of. Remember that hydraulics use fluid which is non-compressible. Things behave a bit differently in pneumatic systems.
 
If I'm not mistaken, the S600 may have a smaller diaphragm diameter-but it is more cone shaped than the G250. The cone shape gives it more surface area than it would have if it were flat.

Also the difference between a G250 and G250V diaphragm. Which by the way although interchangeable if using a V on a non V will result in a no longer centered purge button as it's thicker around the outer lip. I guess a thinner friction ring could solve the problem though.
