Im fixing to buy a new cylinder....probably a X8 119 but i was unsure of what valve to get, either a 200 pro or a 300 bar. i know that a 300bar din reg will fit both, but is there any advantage/disadvantage to what size valve. The 200 bar/ yoke convertible or (pro valve) seems like a good idea incase someone needed to borrow my tank but only had yoke regs, but i was worried that it might not be as safe or as reliable as a 300 bar valve.
Any experience with either or ideas??

You can find alot on this searching here.

In brief: Get the 200bar, convertible and less likely to get dinged out of round and useless. 300bar is no stronger, the added depth of threads are not needed structurally.

Yes, Rjack summarizes it nicely. Details are available in numerous threads on the subject.

The rule is easy: You have a 300 bar tank and intend to use 300 bar, than use the 300 bar valve
If the tank is only 200 bar it is dangerous because it shows someone who refill that the tank can do 300 bar.
