Can you get the MEC without the collar?
Why would you want one without the collar? It will increase the insulation around your neck and if it's too hot for you, you don't have to zip it all the way up.
The jumpsuits come apperantly only with the turtleneck collar but they have 2 pieces that will have a lower collar but they will add bulk on your torso and will restrict your range of motion to a certain degree.

I have to admit I wouldn't want the collar either. It would just get in the way for me, since I have neoprene (foldover) seals

So do I, a Poseidon Unisuit Exclusive with an attached hood !!! If you know this suit, you know what a PITA it is with the neck seal ;)
From first hand experience, let me tell you that it is not in the way at all. The neck isn't that high.

I guess it all depends on how much neck you have. ;)

But seriously, for me there's a LOT of foldover on my neckseal. Oh, not so much so that it's totally doubled over on itself, but still a lot. While it would be nice to think that the neck on the undies would be useful, I wouldn't want to chance the hassle if it didn't fit wasn't quite right. You know, the old "if it ain't broke, don't fix it" trick. :D
