You will definitely need to book in advance. Not only dive boats but hotels get busy and full quickly at this time of year.
Nature and beaches with less tourism you can go to Khao Lak, the terrestrial national park of Koh Sok is not too far from there, jungle and river and lots of life.
From Koh lak you can do daytrips to Similan , Koh Bon, Tachai and Richelieu, so you are not away too much from family.
If you want to see the more South sites from Phuket, quieter area's are Naiharn, Cape Panwa, Kata Noi. you can do daytrips to Phi Phi,the shark point area and Racha Islands. Snorklers are welcome to join most dive trips so maybe an activity you can all do together as a family for 1 day.
