We are looking to go to the Caymans for a week in Oct. Any OP's use steel tanks? Also we are used to an AI resort but haven't found one online. This will be our first trip to the island and would like to do 5 days of diving.
 
We are going in April for our first trip as well and are diving with Ocean Frontiers, which is on the east end. We are also staying at the resort they are housed in (Compass Point) for convenience and relaxation.

Like I said, we haven't been to GCM yet but the resort has really good reviews and you can find great reviews about OF on here.
 
Sunset House also bundles/room/diving/breakfast. Besides MyBar for lunch and the SeaHarvest restaurant (both extra) you can walk to Georgetown for other meals. Cayman Islands Scuba Diving Resort

Although for steel tanks, Divetech at Cobalt Coast ^ might be the (only?) place.
 
Either would be an excellent choice.The rooms at Cobalt are more up to date and the shore diving is better on site if the weather permits. The dive op they use is Dive Tech so there is acess to shore diving at Lighthouse Point included in their package rates as well. Cobalt is a long way from Georgetown and isolated, so a car would be a must. Sunset is centrally located, has a great bar area and more action. Both have good dive ops and easy access to good shore diving. Really depends on what you are looking for.

I would not go for an all inclusive. There are lots of good restaurants to chose from with a range of cuisines and prices.
 
Steel tanks are very rare in Cayman.

Since most divers do not need much exposure protection, weight belts tend to be relatively light. For some divers who are comfortable with no exposure suit, they may end up negatively buoyant at the end of a dive with a steel tank. Not good.

There are no truly AI resorts in Grand Cayman. Some places can put together a meal plan with an on site restaurant but AFAIK alcoholic drinks are not included.

I think the Reef over on the East End does one, but not sure about how good it is. With the cost of alcohol, I would think that an AI would be prohibitively expensive.
