I spent some time on Eleuthera some five years ago now, but the one place where we found good (but hard to get to and you needed to haul your own tanks) was at lighthouse point on the far southern tip of Eleuthera. When you get there (through an overgrown dirt path that is supposedly a road) set up camp on the eastern side of the tip (at the bottom of the cliff) on the white sand beach and shore dive straight out about 40-50 yards. Magnificent untouched little reef right there with tons of fish. You'll have the place to yourself. FWIW and YMMV
