There are some walls in Lake Cour de lane in Idaho that might be accessible to you. Not positive on the shore access or the depth though. But they are within driving distance of the van and ID is basically ignoring covid so maybe those would work. Perhaps ask someone in the ID forum here.

All the 250ft+ sites in Washington are unsuitable for winter and only a couple are suitable for a class even with lots of local experience.
