This is a VERY difficult question, there are so many to choose from!
Dolphins are my favorite mammal UW. They just seem so happy. Then again so are seals and sea lions!
As for fish, I have to go with the JewFish also known as the Goliath Grooper.
But there are so many cool thing UW that I have not seen, that I reserve the right to change my mind on a by dive basis!
BTW, no Playing with the puffer fish! :11:

I had an awesome experience with dolphins when I was in Kona on the Aggressor. But honestly...even the fish in quarry I go to....which include catfish, bluegill, pike....can be quite entertaining and I have had some cool encounters.
