I just purchased a used Viking Pro. It has a square inflator valve with no inflator hose. My question, should I replace the valve with a 360 swivel or buy the inflator hose (hard to find)?

That inflator sounds more like the ones used on a SPORT than a PRO.
Sport hose = $95 retail
HD/PRO/Xtreme hose = $65 retail.
new swivel inlet valve, $110 retail (yikes!)
Conversion nipple to switch over to US style (inferior) connectors, $10.
Viking inflator nipples do not interchange with the US style (Seaquest). (o-ring seat in the base, different stem, too)

Your local shop should be able to knock 25% off those prices & still make a tidy profit.
Unisuit (Poseidon) hoses will fit the HD/PRO/Xtreme valve nipples.

Give a holler if you don't have a local shop handy.
 
The square inflator is the sport inflator.
They are a PIA and not as scure as the 360 swivel or Pro inflator.
You can buy the Viking inflator or buy the Sci-tek (they make then for Viking)

Apex also make a similar version.

I'd replace it if it was mine.
