Is the Dive-Rite RG2500 simply the combination of the RG1208 and the RG2010? Or is the RG2500 something totaly different?

Yep, you got it right. Just the combination of the two stages you have mentioned. About the only options are to add the "ICE" kit which is the environmental seal on the first stage and hose length choices. If you dive in either cold water or water that is extremely silty the "ICE" kit would be a good option to add.
