Are the Zeagle flathead 6 or even 7 any good in cold water?

Yes, I use FH VI and I did Ice dives with it. did not have free flows. I did not take it deep on air though. Max was 124ft. in 50F water. I did not notice any performance reduction even when I keep it on the hardest setting.
Was at 90ft though in 37F water.

To the OP. Check what your local divers dive. Here in Toronto guys will likely have Apekses DST/DS4 with XTX200/50 or SB MK17/G250V. This is what I see a lot.

You can try my LDS Aquarius Scuba Diving Center - Scuba Equipment - Sales, Rentals & Training Instruction Courses in Toronto, ON (416) 604-4203, they sell both Apekses and Scuba Pros. I know they have trade in - trade up program now. So if you have some trashy reg that you can dump you can save some bucks. I think they sell you top of the line regs for 499 if you turn in some other reg, even not functioning. Call them up before talk to Mark - he is there after 6:30 pm and he is the owner.
I think you can even had MK17 converted by them to DIN if you need it. My buddy recently got MK17/G250V so they must have them in stock.
 
I dive in Toby 3 or 4 times a year with my Mares Abyss and never have had a problem. I have been on the Arabia and Niagara II, which are probably the coldest wrecks up there.
There is absolutely no problem with getting them serviced. There is 3 shops that can service them. Travel Sports Equipment in London, Dans's Dive shop in St. Catherines and Dive Tech in Mallorytown. All 3 of them deal on the internet.

No matter which brand of regulator you go with consider getting one the Apeks free-flow shut off valves. They are very effective in stopping a free-flow. Last year in 36 degree water I took my primary out of my mouth at depth, shook it around till it free-flowed to test the valve. I wanted to make sure that the valve would work in an emergency. I slid the valve to the off position which stopped the free-flow. When I put the reg back in my mouth and slide valve back on the reg worked just fine. I only use one of the shut offs on my primary 2nd stage. The reason I only use it on my primary is because I keep that regulator tuned for the easiest breathing which means it is the most likely to free-flow. Where as my my backup on my necklace is detuned so it won't easily free-flow and in an emergency I wouldn't want my back-up to be accidentally shut off.

So what is the difference between this thing and just putting your finger into the mouthpiece ?

Practice shows that with the 1 st stage free flows closing one reg does not help. The air will find another way around. Through the octo, inflator hose, etc.
