Hi Ben,
The Juliet is not a dedicated dive liveaboard. It also serves non-divers (like your wife) and therefore offers scuba as only part of its daily activities. I suspect they'll be 2 morning dives most days, with the remainder of the day given over to sailing and non-scuba entertainment.
Having the deck heavily stacked with seasoned divers couldn't hurt, but I doubt it would change the essence of the Juliet experience.
In any event, I suspect that you'll have quite a good time.
