OK, here's another I just tried this past weekend...

Lemon Rosemary Salmon

Cover the bottom of a glass baking dish with thinly sliced lemon slices. Place several sprigs of fresh rosemary on top of the lemon slices. Place the salmon filets (no skin) on top of the lemon and rosemary. Put a few more sprigs of fresh rosemary on top of the slamon, and cover this with more thinly sliced lemon slices. Drizzle a couple of tablespoons of olive oil on the top and cook for 20 minutes, or until salmon becomes flakey, in an oven pre-heated to 400 degrees.

Very healthy!
