I am trying to understand the difference between the Stiletto and Escape BCD. I usually travel by air to dive so I want a good travel BCD. I do not care about the number of D-rings or pockets.
I am 6'7" tall and 275lbs but I always dive in warm water with only a shorty.

It looks like the main difference is the weight release system. I usually dive with 20lb so they both look adequate.

Do they both come with lumbar pads?
Any other differences?

Will an XL Escape be big enough?

The main difference is the weight system.

The Stilletto also has the "Personal Fit System" which allows you to change the shoulder section, if needed - the Escape does not.

The Stiletto is also made of a little heavier material, so it will wear better for a longer period of time.

6'7" and 275 is pretty big. You may need to look at a larger size, but check out the sizing chart on the website and see where you fall! If you need something larger than an XL, you will probably need to go with the Stiletto.
