Any advice on which part of St. Croix is best to stay at for close and easy (and hopefully beautiful!) shore diving? I'm a DM, but my wife is a newbie and doesn't really like boats. Any recommendations on nice hotels/B&B's, dive shops, etc? Thanks!

Cane Bay on the north shore can't be beat, and the Cane Bay Dive Shop is right there! Beautiful easy shore entry, reefs start at 20 ft and go to a few thousand, so just pick what you are comfortable with and enjoy! Plus plenty of local accommodations there, the folks at Cane Bay can help you out!
 
Carambola is nice for shore diving as well. Reasonably nice hotel, undergoing renovations so a bit rough looking in some spots. Nice restaurant and pool.

Cane Bay is great too. Really good restaurant on site and I think they have cottages for rent. Parking can be challenging. Getting to the beach entails crossing the road --usually not a big deal.

Both have a bit of a swim to get out to the wall, but not bad. By the 5th dive of he day you get a bit tired of it though. :)
 
If you want to do mostly shore diving, Cane Bay is what I recommend. It's where we go to dive on our days off.
 
For a non-boat-lover-spouse, keep in mind that the west end of St. Croix (wrecks, reefs, and the Pier) is on the leeward side so the water is almost always flat calm and the boat rides to the sites are normally 10 minutes or less. Restricting yourself to only shore diving will leave out some incredible other dive sites around the island.
