Would this work on the most recent full size Ipod as well as the phones? I would rather put a $200 Ipod touch at risk than my super expensive and essential phone.

Would this work on the most recent full size Ipod as well as the phones?.... .
iPod Touch does support Bluetooth 4.0 so it will work. But, you have to find an underwater housing for it.
I was told that some divers were able to jerry-rig housings for the iPhone 5 to work with the iPod Touch.

If you have signed up as a beta tester and have indicated that you will be testing SDC with an iPhone AND have signed and returned to us the SDC Beta Testing Agreement, Your SDB kit is on your way (or maybe you have received it already).

You should also have received from Apple an email with subject "TestFlight: You're invited to test Smart Dive Computer 1.0" ......

.... please open this email with your iOS 8 smartphone and follow instructions.

Also, please note that in order to test the SDC App you will need first to install the TestFlight App from Apple.
