sheepshead and Moray's

I have a question for everyone out there...actually two. The first being, I have heard that the Sheepshead is very tasty if prepared correctly....any suggestions?.........The 2nd is, I have been told by a chef friend that the Morays, are also considerred a delicacy....I'm not sure if they are protected?.....any insight would be awesome.

I hear if you soak sheepshead in Tequila it is very tasty, in fact since they soak and leave the worm in the tequila why not sheepshead?
I think if you drank enough tequila anything could become a delicacy. ha.

I've barbecued sheepshead with just some pepper and lemon. That was a pretty tasty way to do it.

I had sheepshead this past weekend. My wife breaded it and we added spices. She fried it in an electrical skillet onboard our boat. Tasted good but Calico meat is better.
Chef Purdolmes spices are killer on fish.
