One thing that hasn't been mentioned is your strobe mounting and aiming. If you're pointing your strobe right at the subject, especially with auto settings on the camera, you'll have blow outs. It really helps to be able to get the strobe a little farther away. Are you using a diffuser? That will make a difference as well.
