So, if we were to stay at Anthony's Key Resort, what would the diving/weather be like in May?

You will have onshore winds coming from the SE on a regular basis. This gives you some air moving thru the resort when you're on shore, keeping the bugs away, also cooling it off a bit. Temp will be mid-80's. Maybe 2' chop at the dive sites. Perfect month for Roatan south shore, IMHO.
